The cherries sold at the Cooperative come from about 900 small owners

PROCESS :

The cherries are stored for 24 to 36 hours in a tank or they start slightly to ferment. Then, they are pulped thanks to a Pénagos pulper with thermal engine then the grains pass in "washing channels" in order to be cleaned and sorted by density. The grains are then dried on African beds for 10 to 12 days. then they are left standing in the warehouse to allow them to reach 10.5% to 11% moisture content.
